It has been found that there are more of the healthful polyphenols in the younger tea leaves. Drinking high quality whole leaf teas produces more health benefits and a tastier cup of tea. In order to receive the full benefits from the leaves it is important to steep the leaves for a total of at least three to five minutes; as this is when the polyphenols are released from the leaves. To insure the tea is sweet (not bitter), we recommend steeping your tea leaves for 30 to 60 seconds on the first steeping, increasing the steeping time for subsequent steepings.
